Preparation time: approx. 1 hour<\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Ingre\u00addi\u00adents:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400g green beans, halved<\/li>\n\n\n\n<li>1 can of corn (or ker\u00adnels cut from the cob)<\/li>\n\n\n\n<li>\u00bd small rutaba\u00adga, peeled and diced <\/li>\n\n\n\n<li>\u00bc Hokkai\u00addo pump\u00adkin, peeled and diced<\/li>\n\n\n\n<li>1 large pota\u00adto, peeled and diced<\/li>\n\n\n\n<li>6 toma\u00adtoes, cut into wedges <\/li>\n\n\n\n<li>1 red bell pep\u00adper and \u00bd green bell pep\u00adper, diced <\/li>\n\n\n\n<li>2 onions, cut into wedges <\/li>\n\n\n\n<li>1 gar\u00adlic clove, crushed <\/li>\n\n\n\n<li>1 chili pep\u00adper (Scotch bon\u00adnet or habanero) <\/li>\n\n\n\n<li>1\u20132 tsp salt<\/li>\n\n\n\n<li>\u00bd tsp black pep\u00adper <\/li>\n\n\n\n<li>1 bay leaf <\/li>\n\n\n\n<li>4 all\u00adspice berries <\/li>\n\n\n\n<li>\u00bd tsp sug\u00adar <\/li>\n\n\n\n<li>2\u20133 tbsp veg\u00adetable oil, for brais\u00ading<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<p>Place the pota\u00adtoes, rutaba\u00adga, and pump\u00adkin in 2\u20133 liters of water with salt, the bay leaf, and the all\u00adspice berries. Bring to the boil and cook until ten\u00adder. Using a ladle, trans\u00adfer the veg\u00adeta\u00adbles to a sieve, and set aside.<br>In the same cook\u00ading liq\u00aduid, blanch the green beans until just ten\u00adder yet still crisp (approx. 10 min\u00adutes). Remove and set aside.<br>While the veg\u00adeta\u00adbles and beans are cook\u00ading, heat the veg\u00adetable oil in a large pan and gen\u00adtly saut\u00e9 the onions, bell pep\u00adpers, and gar\u00adlic until soft and fra\u00adgrant. Add the toma\u00adto wedges and cook until they begin to break down.<br>Deglaze with a lit\u00adtle of the veg\u00adetable cook\u00ading liq\u00aduid, stir in the toma\u00adto pur\u00e9e, and add the whole chilli pep\u00adper. Sprin\u00adkle in the sug\u00adar and sea\u00adson with salt and black pep\u00adper to taste. Cov\u00ader and allow to sim\u00admer gen\u00adtly over a low heat. The sauce should reduce to a light\u00adly thick\u00adened, vel\u00advety con\u00adsis\u00adten\u00adcy.<br>Final\u00adly, fold in the pre-cooked veg\u00adeta\u00adbles and keep warm. Remove the chilli pep\u00adper before serv\u00ading.<\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Corn Rolls (vegetarian, contains gluten)<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Makes 12 rolls. Preparation time: approx. half a day.<\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Ingre\u00addi\u00adents:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 ml luke\u00adwarm milk<\/li>\n\n\n\n<li>1 sachet dried yeast<\/li>\n\n\n\n<li>35 g sug\u00adar<\/li>\n\n\n\n<li>2 egg yolks<\/li>\n\n\n\n<li>160 g yel\u00adlow corn\u00admeal<\/li>\n\n\n\n<li>300 g wheat flour<\/li>\n\n\n\n<li>\u00bd tsp salt<\/li>\n\n\n\n<li>Option\u00adal: a small pinch of cin\u00adna\u00admon, nut\u00admeg, clove, and all\u00adspice berries<\/li>\n\n\n\n<li>60 g salt\u00aded but\u00adter, soft\u00adened<\/li>\n\n\n\n<li>A lit\u00adtle but\u00adter, for brush\u00ading<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<p>Mix the milk with the dried yeast and sug\u00adar, stir\u00adring well until dis\u00adsolved.<br>Com\u00adbine all dry ingre\u00addi\u00adents in a large bowl and make a well in the cen\u00adtre. Pour the milk\u2013yeast\u2013sugar mix\u00adture into the well, then add the light\u00adly beat\u00aden egg yolks and the but\u00adter. Knead into a smooth, elas\u00adtic dough until it begins to form bub\u00adbles.<br>Shape the dough into a ball and place it in a large, light\u00adly floured bowl. Cov\u00ader and leave to rise in a warm place for 1\u20132 hours, until dou\u00adbled in size.<br>Turn the dough out onto a floured sur\u00adface, knead thor\u00adough\u00adly, divide into 12 equal por\u00adtions, and shape into round rolls. Arrange them in a deep bak\u00ading tin lined with parch\u00adment paper, cov\u00ader with a kitchen tow\u00adel, and leave to rise again for 30\u201360 min\u00adutes, until rough\u00adly dou\u00adbled in vol\u00adume.<br>Pre\u00adheat the oven to 170 \u00b0C (fan-assist\u00aded) and bake for about 20 min\u00adutes, until gold\u00aden and hol\u00adlow-sound\u00ading when tapped on the base.
